This steak is actually the same cut as a rib eye, but without the bone.
The Delmonico steak is cut from the primal rib section of the cow. It has generous amounts of marbling and is juicy, rich, and full of flavor!
All that marbling equals big flavor. When this steak cooks, that fat melts, and the steak bastes in the fat, resulting in an absolutely mouth watering piece of meat.
It is best to cook this by simply searing it with minimal spices and salt and pepper to appreciate its natural flavors.
