The Perfect Roast Beef
Roast beef might sound fancy, but it can be for any night of the week with this recipe for the perfect roast beef! With a good piece of meat from Wolf Oak Farm and some simple seasoning and fresh herbs, cooking the perfect roast can be quire simple.  Just about any beef roast can be used for this recipe and the best part about making a whole roast is the left overs! After your fancy feast, slice the roast thin for home made deli meat, or add to soup, stews and salads. Cook once and eat all week long with this delicious roast beef recipe!

Ingredients

  • (1) Beef - Round Roast
  • (1/4 Cup) Olive Oil
  • (3 Cloves) Garlic, Minced
  • (1 Tbsp) Chopped Fresh Rosemary
  • (1 Tbsp) Chopped Fresh Thyme Leaves
  • (2 tsp) Kosher Salt
  • (1 tsp) Crushed Black Pepper

Directions

  1. Recommended: let roast sit uncovered on a wire rack set in a baking sheet in the refrigerator 1 hour, up to overnight. Remove from refrigerator and allow meat to come up to room temperature, 1 to 1 1/2 hours.
  2. Preheat oven to 450°. In a small bowl, combine oil, garlic, rosemary, thyme, salt, and pepper. Rub all over roast.
  3. Place roast in roasting pan fitted with a roasting rack. Roast for 15 minutes, then reduce heat to 325° and roast 1 hours 45 minutes more for medium, or 2 hours for medium well done.
  4. Remove from oven and let rest 15 to 30 minutes before serving.
